Many wonderful endeavors are inspired by a conversation that took place around the dinner table. It was just such a conversation around the Nickel family table in 2009 that planted the seed for Hinterbook Estate Winery, Niagara’s newest premium winery.
While the concept of a winery was what inspired Phil Nickel to plant grapes on his farm in 1998, the detailed plan for his dream developed slowly. As his precious plot of vines grew stronger, so did his passion for wine and protecting our planet. By 2009 Phil’s commitment to produce premium wines with the latest technology in an eco-conscious manner was firm.
In designing the winery, Phil incorporated his passion for the environment through initiatives such as geothermal heating and cooling, rainwater collection for winemaking process water use and implementing an effective sanitation program that doesn’t require chemicals. A 1,000 square foot solar panel tracks the position of the sun to generate enough power to supply the winery’s electricity demand.
Hinterbrook’s grapes are handpicked, hand-sorted and gravity fed on one level. This artisanal approach, combined with the talents of winemaker Natalie Spytkowsky and her Vines to Vintages winemaking team, produces wines that are unsurpassed in quality.
While the winery specializes in Riesling, Pinot Noir and Franc Blanc, a white wine produced from 100% Cabernet Franc grapes, several of its other vintages are also being noticed. At the 2011 All Canadian Wine Championships Hinterbrook’s 2010 Rose and 2010 Riesling were recognized with Gold, its 2009 Cabernet Franc Icewine with Silver and its 2010 Sauvignon Blanc and Pinot Noir with Bronze. Hinterbrook also was recognized with Bronze awards at 2011 Intervin for its 2010 Pinot Noir, 2010 Rose and 2009 Cab Franc Icewine.
